Annabel Karmel's mealtime designs encourage kids to eat

Author Annabel Karmel has been giving mums inspiration for mealtimes on her Instagram account.

If you struggle to get your little ones to show interest in food, Annabel has been creating special designs that might make dinnertime more successful.

One design turned grated carrot and yellow peppers into Big Bird from Sesame Street, while another of Annabel's ideas was to turn porridge and fruit into a playful owl design. For Pancake Day there was also 'hunny bunny pancakes', using sliced bananas to turn the humble pancake into little rabbits.

CRUNCHY SALMON FISH CAKES This recipe is from my very popular App for iPhone and iPad The Essential Guide to Feeding Your Baby and Toddler with over 220 recipes and videos from first tastes and finger foods through to family food. These fish cakes are delicious and they taste just as good if you make them into simple round shapes ! 200g potato 3 Spring onions, finely sliced 170g salmon fillet, skinned and chopped 15g Parmesan cheese, finely grated 1 1/2 tbsp mayonnaise 2 tsp sweet chilli sauce 2 tsp ketchup 2 tsp lemon juice 2 tsp fresh dill, chopped 15g fresh white breadcrumbs Sunflower oil for frying 2 eggs beaten 75g dried breadcrumbs for coating 30g Parmesan cheese, finely grated 1 Peel the potato and boil for 20 to 25 minutes until soft. Drain and mash. 2 Mix together the ingredients for the fish cakes. Season well. 3 Divide the mixture into 4 balls. Chill if possible for 3 to 4 hours or overnight. 4 Mix the breadcrumbs and Parmesan. Form the mixture into about 6 fish cakes . Dip the fish cakes in the beaten egg then coat in the crumb. 5 Dip in egg once again and coat in the crumbs mixture. 6 Heat some oil in a frying pan . Fry the fish cakes for 2 to 3 minutes on each side until golden and the salmon is cooked through. 7 Place the fish cakes on a plate.
