Using mashed potato from Christmas lunch, Boxing Day ham and, of course, cranberries, these savoury muffins are a healthy treat, and the peas sneak in some extra veg.
- Preheat the oven to 200°C/400°F/ gas mark 6. Oil 8 holes of a muffin tin.
- In a bowl, mix together the mashed potato, eggs and cranberry sauce until well combined. Add the ham, peas and cheese, and mix well. Season to taste.
- Spoon the potato mixture into the muffin tins (use an ice cream scoop).
- Bake for 25-30 minutes until golden brown. Allow the muffins to cool in the tin for 10 minutes before removing.
