Sugar-free coconut rice pudding

Ingredients

  • 60g pudding rice

  • 450ml full-fat milk

  • 100ml coconut milk

  • ½ tbsp desiccated coconut

  • ½ tsp vanilla extract

  • Optional toppings

  • Fruit compote, sugar-free jam, chopped fruit.

This delicious rice pudding is naturally sweetened with coconut. It’s great for weaning babies.

  • Place all the ingredients in a heavy- bottomed saucepan. Bring to the boil then reduce to a simmer.

  • Cover with a lid and allow the rice to simmer, stirring every few minutes, for 30 minutes or until all the milk has been absorbed and the rice is soft.

  • Serve with a dollop of fruit compote, sugar-free jam, chopped fruit or other toppings of your choice.
