  • 2 eggs

  • 1 ripe banana

  • Coconut oil or vegetable oil for frying

  • Fresh strawberries or Greek yoghurt to serve

Looking for gluten-free, wheat-free, sugar-free pancakes for your little one's this Pancake Day? These healthy pancakes from Organix are perfect and are made from three simple ingredients.

1. Blend together the eggs and peeled banana in a liquidiser or food processor until smooth.

2. Heat a drop of oil in a small frying pan over a medium heat.

3. Add a ladle of batter to form a small pancake approx. 6cm across. Allow it to cook for about 2-3 minutes: bubbles will form on the top. Then flip it over and cook the other side.

4. Repeat until you have used up all the batter (you can cook a few at a time in a larger pan if you prefer and keep the cooked pancakes warm in a low oven while you cook the rest).
