Minced Beef With Kale & Butternut Squash

  • Serves: 5
  • Preparation time: 35-40 minutes


  1. Heat the oil in a saucepan. Add the onion and celery and sauté for a few minutes, then add the beef and sauté with the vegetables until browned, stirring occasionally.
  2. Add the garlic and squash and fry for 2 minutes, then add the tomatoes and stock. Bring to the boil, reduce the heat, cover and simmer for 20 minutes. Add the kale and simmer for 10 minutes. Remove from the heat, puree in a blender until it reaches the desired consistency, then stir in the cheese until melted.
