Beef, Sweet Potato, Apricot and Spinach by Annabel Karmel

Ingredients

  • 2 tsp sunflower oil

  • 100g onion, finely chopped

  • 75g red pepper, diced

  • 50g sweet potato, peeled and diced

  • 100g minced beef

  • 3 dried apricots, sliced

  • 25g fresh spinach

  • 200ml weak beef stock

  1. Heat the oil in a saucepan. Add the vegetables and fry for 2 to 3 minutes.

  2. Add the beef and fry until browned, then add apricots and stock.

  3. Cover with a lid and simmer for 20 minutes.

  4. Add the spinach and continue to simmer for 2 minutes. Blend to the desired consistency.
