10 fritters

Ingredients

  • 50 g self-raising flour

  • 1 egg

  • 1 tbsp milk

  • 1 medium carrot (100g) peeled and grated

  • 50g courgette, washed, topped and tailed, and grated

  • ½ medium red onion (about 75g), peeled and finely chopped

  • 2 tbsp drained tinned sweetcorn

  • 2 tbsp chopped basil

  • 1 tsp sweet chilli sauce

  • 50g Cheddar cheese, grated

  • Salt and pepper (optional)

  • A little oil for frying

1) Put the flour, egg and milk into a bowl. Mix together, then add all the remaining ingredients except for the oil.
2) Heat the oil in a frying pan, drop in tablespoonfuls of the mixture, and fry for 2–3 minutes on each side.
