Christmas leftovers muffins

Ingredients

  • 1 tbsp sunflower oil

  • 600g leftover mashed potato

  • 2 medium eggs

  • 100g cooked ham, chopped

  • 100g cooked peas

  • 2 tsp cranberry sauce

  • 50g grated Cheddar cheese

  • Pepper to taste

Using mashed potato from Christmas lunch, Boxing Day ham and, of course, cranberries, these savoury muffins are a healthy treat, and the peas sneak in some extra veg.

  1. Preheat the oven to 200°C/400°F/ gas mark 6. Oil 8 holes of a muffin tin.

  2. In a bowl, mix together the mashed potato, eggs and cranberry sauce until well combined. Add the ham, peas and cheese, and mix well. Season to taste.

  3. Spoon the potato mixture into the muffin tins (use an ice cream scoop).

  4. Bake for 25-30 minutes until golden brown. Allow the muffins to cool in the tin for 10 minutes before removing.
