Salmon with Gremolata by Pippa Campbell

Ingredients

  • 4 Salmon Fillets

  • Large handful flat-leaf parsley, finely chopped

  • Grated zest and juice of 1 lemon

  • 2 crushed garlic cloves

  • 2 tbsp extra virgin olive oil

Gremolata is an Italian mixture of parsley, lemon zest and garlic - it is full of immune boosting antioxidants/ Salmon also provides anti-inflammatory Omega 3 fats which are essential when you're growing a baby!

  1. Mix the Gremolata ingredients and spread half over the salmon fillets.

  2. Bake at 180 degrees for approx. 10 minutes.

  3. Place on serving plates and drizzle with remaining Gremolata.

  4. Serve with Samphire or other greens.
