Recipe: Orzo rainbow salad

  • Serves: 4-6
  • Preparation time: 10 minutes


  1. Cook the orzo pasta in boiling water according to the packet instructions. Add the broccoli for 2 minutes before the end of cooking time. Drain and refresh in cold water.
  2. Put the pasta, broccoli and sweetcorn, quartered tomatoes and basil into a mixing bowl.
  3. Mix all of the dressing ingredients together in a small jug.
  4. Pour over the salad before serving.
