Blend the cooked omelette
These mini omelettes are the perfect shape and size for toddler fingers.
Melted butter, for greasing
4 eggs, beaten
2 tbsp chopped chives
3 sun-dried tomatoes, finely sliced
75g feta cheese, crumbled
salt and black pepper
Quick snack for your toddler or cute canapé for your drinks party – these mini omelettes will cover both bases...
Brush a 12-hole mini muffin tray lightly with melted butter to grease.
Mix together all the remaining ingredients in a large bowl until just combined.
Pour the mixture into the greased holes and place in a preheated oven on 220°C/gas mark 7, for about 10 minutes until golden and puffed up.
Remove from the oven and serve warm.
