125g orzo pasta
75g tiny broccoli florets
100g cooked chicken, diced
100g Piccolo Cherry Tomatoes, quartered
2 tbsp basil, chopped
2 ½ tbsp rice wine vinegar
4 tbsp Olive oil
1 tbsp sweet chilli sauce
75g Piccolo Cherry Tomatoes, finely diced
1 tbsp chives, chopped
Cook the orzo pasta in boiling water according to the packet instructions. Add the broccoli for 2 minutes before the end of cooking time. Drain and refresh in cold water.
Put the pasta, broccoli and sweetcorn, quartered tomatoes and basil into a mixing bowl.
Mix all of the dressing ingredients together in a small jug.
Pour over the salad before serving.
