Recipe: Orzo rainbow salad

  • 125g orzo pasta

  • 75g tiny broccoli florets

  • 150g sweetcorn

  • 100g cooked chicken, diced

  • 100g Piccolo Cherry Tomatoes, quartered

  • 2 tbsp basil, chopped

  • Dressing:

  • 2 ½ tbsp rice wine vinegar

  • 4 tbsp Olive oil

  • 1 tbsp sweet chilli sauce

  • 75g Piccolo Cherry Tomatoes, finely diced

  • 1 tbsp chives, chopped

  1. Cook the orzo pasta in boiling water according to the packet instructions. Add the broccoli for 2 minutes before the end of cooking time. Drain and refresh in cold water.

  2. Put the pasta, broccoli and sweetcorn, quartered tomatoes and basil into a mixing bowl.

  3. Mix all of the dressing ingredients together in a small jug.

  4. Pour over the salad before serving.
