60g pudding rice
450ml full-fat milk
100ml coconut milk
½ tbsp desiccated coconut
½ tsp vanilla extract
Fruit compote, sugar-free jam, chopped fruit.
This delicious rice pudding is naturally sweetened with coconut. It’s great for weaning babies.
Place all the ingredients in a heavy- bottomed saucepan. Bring to the boil then reduce to a simmer.
Cover with a lid and allow the rice to simmer, stirring every few minutes, for 30 minutes or until all the milk has been absorbed and the rice is soft.
Serve with a dollop of fruit compote, sugar-free jam, chopped fruit or other toppings of your choice.
