Chicken, Quinoa, Sun-Dried Tomatoes & Avocado Salad

Method

The foods in this salad are rich in health-boosting nutrients for pregnancy, including protein, iron and vitamin E. Plus, it tastes ah-mazing...

  1. Cover the quinoa with cold water and bring to the boil, then simmer for 15 minutes. Top up with water if it looks like it's getting a bit dry. Drain.
  2. Place the quinoa on a plate and sprinkle with the watercress, cucumber, avocado, sun-dried tomatoes and top with the chicken slices.
  3. Sprinkle the chopped coriander over the top.
  4. Mix the dressing ingredients and serve on the side.

Vegetarian alternative: Replace the chicken with 50g firm goats’cheese. If you're pregnant, use mozzarella or feta.
